  1. Comenzaremos echando un chorro de aceite virgen extra en la paellera, e introducimos el ajo cortado finamente, cuando comience a dorarse añadimos el resto de verduras previamente cortadas en pequeños dados, y dejamos que se vayan pochando a fuego lento durante unos 5 minutos.

A continuación añadimos el pollo el cual habremos cortado en pequeños trozos, dejando rehogar junto a las verduras, cuando esté dorado a añadimos el calamar y seguimos con nuestro sofrito un par de minutos más, momento en el que echaremos un chorro de vino blanco que dejaremos cocer hasta que se evapore el alcohol, añadimos dos cucharadas de tomate frito, y una de azafrán.
  3. En este punto introducimos la almejas, los mejillones, las gambas, y nuestros langostinos, ahora agregamos el arroz y rehogamos bien todos los ingredientes, incorporamos nuestro caldo de pescado (importante que se encuentre caliente) rectificamos de sal y dejamos que cueza en el fuego unos 5 minutos, para luego llevarlo al horno durante unos 17 minutos a 180º (el tiempo de cocción puede variar según la marca de arroz, recomiendo leer el envase y seguir las indicaciones)
  4. Pasado ese tiempo ya solo nos queda emplatarlo y disfrutar de este espectacular arroz. ¡¡Que aproveche!!
