  1. 1 día antes ponemos la carne a macerar con el vino, mostaza, la hoja de laurel, ajo, sal y pimienta y guardamos en la refrigeradora la noche anterior.
  2. Al día siguiente en un sartén calentamos aceite de oliva y el azúcar hasta que haga un caramelo y sellamos la carne aproximadamente 2 minutos por cada lado
  3. Aparte picamos en cuadros la cebolla, zanahoria y el apio
  4. En el mismo sartén donde sellamos la carne incorporamos los vegetales y hacemos un rehogo con ajo, sal y pimienta
  5. Pelamos y picamos en cuadros los tomates y los incorporamos al sofrito y la pasta de tomate dejamos cocinar unos 5 minutos
  6. Luego llevamos a la olla se presión la carne, el líquido que nos quedó de la marinada y el sofrito si es necesario echamos un poco más de agua para que la carne se cocine bien
  7. Tapamos la olla y dejamos cocinar por 35 minutos desde que comienza a sonar. Luego trabajamos y volvemos a cocinar por 15 minutos más, es para que la carne agarre todo el sabor se la salsa
  8. Este asado negro se sirve normalmente con arroz y tajadas de plátano frito, pero también pueden servirlo con puré de papas y ensalada o vegetales
